Mint Julep Cake….for a day at the races

Apparently there is some sort of horse race going on today. I’ve heard about it but I’m certain that I’ll be more interested in this Mint Julep Cake and my rather obnoxious hat. ;)

Mint Julep Cake

1 cup chopped walnuts

1 yellow cake mix

1 small box Jello instant vanilla pudding

4 eggs

½ cup cold water

½ cup vegetable oil

½ cup mint julep mix

Grease and flour bundt cake pan. Sprinkle nuts onto bottom of pan. Mix together all other cake ingredients, when well blended, pour batter into bundt pan. Bake at 325 degrees for one hour. Cool, invert cake remove from pan, use a fork to pierce holes into top of cake, drizzle with glaze.

Mint Julep Glaze

1/4 lb. butter

1/4 cup water

1 cup granulated sugar

½ cup mint julep mix

In a saucepan, melt butter over med. heat, stir in water, sugar.  Cook, stirring constantly until smooth,remove from heat, add mint julep mix.
